Ceritfied Gluten Free because Wheat is less than 5ppm.
How Could It Be Gluten Free?
Elisa Technologies tested all of our sauces for gluten. ALL of our sauces, including the Yaki, came back at less than 5 ppm (5 parts per million which is the best current testing available). We were surprised too. We asked "How could the Bone Suckin' Yaki be gluten free?" We had it tested three more times to make sure. Our Yaki does contain wheat, BUT it is such a small percentage in the soy sauce, it registers less than 5 parts per million.
Yaki is WELL Below the Current Codes
There is no definite standard by the FDA for what makes something gluten free in the U.S. at this time. However, the current codex equates less than 200 ppm, is considered safe for Celiacs. so the Yaki is WELL below the Current Codes. The FDA is in the process of making a rule to change that to 20 micrograms of gluten per gram of food to call something gluten free. So our Yaki is still below 5 ppm is well below that.
